Decaffeination Method Pros Cons Swiss Water Process Completely chemical-free and retains the flavor of the coffee. More expensive and slower process of decaffeination. Organic Solvent Process Uses organic solvents (like methylene chloride or ethyl acetate) for decaffeination, which is efficient and cost-effective. Use of chemical solvents may raise concerns among consumers, although all solvents are completely removed from the final product. Carbon Dioxide Process Carbon dioxide is a naturally occurring gas, making this method both efficient and safe. Requires significant equipment investment, and therefore is more expensive. Mountain Water Process Similar to the Swiss Water Process, this method is completely chemical-free and retains the flavor of the coffee. Like the Swiss Water Process, it is more expensive.
